cheesy stuffed shells

Just wanted to share the recipe from dinner tonight. It was loaded with veggies (zucchini, carrots, celery, tomatoes, spinach) and included tofu for the protein. It was yummy and my kids ate it up.

Made this tonight (of course, I froze half ;-))....we LOVED it! I usually steer way clear of 'stuffed' pasta because the recipe oftentimes uses ricotta cheese (YUCK!!!!), so I was more than happy to try this out because it called for cottage cheese (much more tolerable). And this was also my first recipe using tofu....not sure about how it's packaged (in liquid), but because of tonight, I'm much more willing to try it in other recipes.
